Our Angus is USDA Certified as well as being naturally raised without antibiotics or hormones in the Northern Midwest. The USDA grading system is based on the quality of the marbling and maturity. It signifies the best combination of flavor (related to marbling) and tenderness (related to maturity). Santana Row serves only USDA Certified Prime Angus, while Menlo Park offers a selection of USDA Certified High Choice and Prime Angus. In both our Steak houses we hand cut our steaks in our butcher shop.
